Stormy Nights

So...I had absolutely no idea what to post tonight. I decided to use what I had in the fridge and just wing it. Lo and behold...I did not know what treasures were lurking in my freezer. Tonight's main dish is....

Seafood Stew!

The perfect meal for this disgusting weather!

I remember as a child... stormy Friday nights were epic! My dad would buy me whatever I wanted for dinner and I would watch TGIF and have a grand ole time. I know you remember TGIF on ABC. Full House, Boy Meets World, Family Matters! Step by Step was my fave!

Back to business :)

What you'll need:

snow crab clusters

shrimp

baby lobster tails

red potatoes

fresh pumpkin

corn

celery

carrots

1 medium onion

2 cloves garlic chopped

fresh parsley

Grace chicken soup mix

1/2 tsp ea. of turmeric, paprika, garlic powder, and thyme

3 cups of water

Chop the veggies into 2 inch pieces. Bring the water to boil and add the chicken soup mix. Add in the onion and garlic along with the spices. Then add potatoes, pumpkin, corn, celery, and carrots. Let it simmer for about 5 mins or until the veggies are cooked.

Now its time to add the seafood. The shrimp and lobster go in first. Then the crab. Remember It wont take very long for the seafood to cook. No one likes rubbery shrimp. Once the seafood is all cooked add in the thyme.

Who needs Joe's Crab Shack when you can make this right in your own kitchen?

You can always swap in and out different veggies or types of seafood. This can get kind of messy. A deep bowl would be best. Hope you enjoy!
